Cajun Shrimp Dip with Baguette Crisps
Ingredients for the Dip:
1 Pound Shrimp, Peeled, Deveined, and Chopped into Small Pieces
2 tablespoons Olive Oil
1 tablespoon Cajun Seasoning (or to taste)
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
8 oz Cream Cheese, Softened
1/2 Cup Mayonnaise (I use Duke's)
1/2 Cup Sour Cream
1 1/2 Cups Shredded Sharp Cheddar Cheese
1 Cup Grated Parmesan Cheese
2 tablespoons Fresh Parsley, Chopped (for garnish)
1 tablespoon Lemon Juice (optional for a fresh kick)
Ingredients for Baguette Crisps:
1 French Baguette, Sliced into 1/4-Inch-Thick Slices
2 tablespoons Olive Oil
1 Garlic Clove, Minced
Sea Salt, to Taste
Freshly Ground Black Pepper, to Taste
Instructions:
1.) Cook the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning, smoked paprika, garlic powder, and onion powder. Sauté until the shrimp are fully cooked, about 2-3 minutes per side, until pink and opaque. Remove from heat and set aside to cool.
2.) Make the Dip: In a large mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream. Stir until smooth and creamy. Add the shredded cheddar and grated Parmesan and mix well to combine. Once the shrimp have cooled, chop them into bite-sized pieces and fold them into the creamy mixture.

4.) Prepare the Baguette Crisps: While the dip is baking, prepare the baguette crisps, Oven stays on 375F (190C). Arrange the baguette slices on a baking sheet in a single layer. Drizzle them with olive oil and sprinkle with minced garlic, sea salt, and freshly ground pepper. Bake for 10-12 minutes, or until crisps are a golden brown and crisp, flipping them halfway through to ensure they bake evenly.
5.) Assemble and Serve: Once the dip is out of the oven, let it cool for a few minutes before garnishing it with freshly chopped parsley and a squeeze of lemon juice for that extra burst of freshness, Serve the dip alongside the crispy baguette slices for dipping.
